    PEACH COBBLER
    1 package of pre-rolled pie crust
    1 1/2 cans of sliced Freestone peaches
    cinnamon-just a little
    sugar
    butter
    nutmeg (pinch)
    This is one easy peach cobbler that can be made with a store-bought crust and canned peaches.
    Preheat oven to 350°F. Move the bottom crust into an 8 in square pan, pinch and shape into place. Put in peaches and juice from 1 can (more if you like), add pats of butter, sprinkle with sugar, cinnamon, and just a pinch of nutmeg.
    Top with a prepared purchased top crust, pinch and shape over bottom crust to seal. Cut slits and sprinkle lightly with sugar if desired.
    Put in 350°F oven and bake until brown and bubbly top and bottom.
    30 mins.

    FRESH PEACH COBBLER
    1/2 c. brown sugar, packed
    1 tbsp. lemon juice
    1 1/4 c. flour
    1/4 c. butter
    1/4 c. granulated sugar
    1 c. milk
    1/2 tsp. cinnamon
    4 c. peeled, sliced peaches
    1 tbsp. baking powder
    1/2 tsp. vanilla
    1 egg, lightly beaten
    Lightly butter an 8-cup baking dish. In a large bowl, combine brown sugar, cinnamon and lemon juice. Mix well. Add peaches and toss to mix. Transfer to baking dish.
    Combine flour and baking powder. In mixing bowl, cream butter and granulated sugar until light and fluffy. Beat in egg. Add dry ingredients alternately with milk. Add vanilla, mixing just until combined. Drop batter by spoonsful over peach mixture.
    Bake in 375 degree oven for 25 to 35 minutes or until peaches are tender and top is golden brown. Serve warm.
    Makes 8 servings.

    OLD-FASHIONED PEACH COBBLER
    CRUST:
    3 c. plain flour
    1/2 tsp. salt
    1 1/2 c. shortening
    3/4 c. water
    FILLING:
    1 lg. can sliced peaches
    1 stick butter, melted
    1/2 c. sugar
    1 tbsp. cornstarch
    For crust mix flour and salt; add shortening. Mix with fork until mixture resembles small peas. Add water and stir together. Divide in half. Roll on floured board to desired size.
    Filling: Mix peaches with juice, butter, sugar, and cornstarch together. Butter baking dish well. Put first crust on bottom; add peach mixture. Cover with second crust. Spread melted butter on top, then sprinkle with sugar. Bake 30 minutes in 350 degree oven or until golden brown.
